Clementine & Thyme Margarita Recipe

Craving a colorful cocktail? Make a batch of clementine and thyme margaritas! Garnished with gem-like pomegranate arils, this cocktail will be the highlight of any soirée.

Serves: 2

Ingredients:

For The Cocktails:

  • 6 ounces tequila
  • 4 ounces freshly squeezed clementine juice
  • 1 ounce thyme simple syrup (recipe below)
  • Orange sugar salt, as needed (recipe below)
  • Ice, as needed
  • Fresh orange or clementine slices, for garnish
  • Fresh pomegranate arils, for garnish

For The Orange Sugar Salt:

  • 1 orange, zested
  • 1 tablespoon granulated sugar
  • 1 tablespoon kosher salt

For The Thyme Syrup:

  • ½ cup granulated sugar
  • 2 thyme sprigs
  • 1 orange, zested

Directions:

For The Cocktails:
  • Add tequila, clementine juice and simple syrup to an ice filled cocktail shaker. Shake for 30 seconds, or until outside of the shaker is frosty.
  • Run an orange or clementine slice around two cocktail glasses. Then dip the rim in the orange sugar salt. Add ice to glasses. Strain and divide the margarita mixture into prepared glasses.
  • Garnish with orange or clementine slices and pomegranate arils. Serve and enjoy!
For The Orange Sugar Salt:
  • Add all ingredients to a mini food processor or spice grinder and process until well combined.

For The Thyme Syrup:

  • In a small saucepan, combine all ingredients with ½ cup water over medium heat. Cook until sugar dissolves, about 2 minutes. Remove from the heat and let cool completely, then strain. Makes ½ cup. Store excess in fridge for up to 1 week.
