Gingerbread Waffles

The holiday season is here which means it’s time for all things gingerbread! First up, these spice-laden waffles. Not only do they make the perfect holiday breakfast, these also freeze beautifully, so you can make them ahead of time and reheat them when guests arrive!

Serves: 6

Ingredients:

2 cup all-purpose flour
2 tablespoons powdered sugar
1 teaspoon cinnamon
1 teaspoon ginger
¼ teaspoon ground nutmeg
Pinch of cloves
Pinch of allspice
½ teaspoon baking soda
½ teaspoon salt
½ teaspoon baking powder
1 cup milk
1 cup whole milk yogurt
2 egg whites
1 tablespoon molasses
1 tablespoon vanilla extract
3 tablespoons melted butter
Maple syrup, for serving
Nonstick spray, as needed

Directions:

  • In a large bowl, whisk together flour, powdered sugar, cinnamon, ginger, nutmeg, cloves, allspice, baking soda, salt and baking powder.
  • In a separate small bowl, whisk together the milk, yogurt, egg whites, molasses and vanilla.
  • Combine the wet ingredients into the dry, folding until well combined. Fold in melted butter
  • Let batter rest while you preheat your waffle iron. Grease waffle iron with nonstick spray and cook batter according to the instructions that came with your machine. Note: We cooked our waffles for about 4-5 minutes, or until the batter stopped steaming.
  • Serve waffles with maple syrup, if desired.
