The holiday season is here which means it’s time for all things gingerbread! First up, these spice-laden waffles. Not only do they make the perfect holiday breakfast, but they also freeze beautifully, so you can make them ahead of time and reheat them when guests arrive!

Prep Time: 30 minutes
Cook Time: 30 minutes
Serves: 6

Ingredients:

  • 2 cup all-purpose flour
  • 2 tablespoons powdered sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • ¼ teaspoon ground nutmeg
  • Pinch of cloves
  • Pinch of allspice
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 cup milk
  • 1 cup whole milk yogurt
  • 2 egg whites
  • 1 tablespoon molasses
  • 1 tablespoon vanilla extract
  • 3 tablespoons melted butter
  • Maple syrup, for serving
  • Nonstick spray, as needed

Directions:

  • In a large mixing bowl, whisk flour, powdered sugar, ginger, nutmeg, cinnamon, allspice, cloves, salt, baking powder, and baking soda together.
  • In another small bowl, whisk the milk, yogurt, molasses, egg whites, and vanilla.
  • Combine the dry ingredients with the wet ingredients, folding until well combined. Fold in melted butter
  • Let batter rest while you preheat your waffle iron. Grease waffle iron with nonstick spray and cook batter according to the instructions that came with your machine. Note: We cooked our waffles for about 4-5 minutes, or until the batter stopped steaming.
  • Serve waffles with maple syrup, if desired.
